Peanut Butter and Jelly Sandwiches

Peanut butter and Jelly sandwiches are an American classic. With the exception of those with nut allergies, just about everyone has had a sandwich with the peanut spread and jelly. When I started to think about a cookie that my kids would really like, but is also a little different, I was making a peanut butter and jelly sandwich and I thought, now why couldn't I make this into a cookie? And so here is our adventure in creating a cookie that really does taste just like a peanut butter and jelly sandwich.

What is agave nectar?

Agave nectar is the sap from the agave plant found in Mexico. It is similar in taste and appearance to honey but it is not exact. The agave nectar has a more neutral flavor and often will take on the flavor of the substance that it is being added to and therefore is a nice substitute in many dishes.


Ingredients for Peanut Butter and Jelly Sandwich Cookies

  • 1 cup Natural Peanut Butter, I like to use the store brand. This peanut butter has no added sugar in it.
  • 1 cup brown sugar
  • 1/2 cup agave nectar, if you do not use or cannot find agave nectar, you can substitute 1 cup of granulated sugar
  • 3/4 cup butter
  • 2 1/2 cups sifted flour, remember to sift first and then measure.
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/4 cup boiling water
  • 2/3 cup quick cooking oats
  • about 4 oz. your favorite jelly or jam, The amount of jelly will depend on how much you want to put between cookies.

Instructions for Making Oatmeal Peanut Butter and Jelly Sandwich Cookies

  1. Preheat oven to 350 degrees F.
  2. Mix softened butter, and sugars in a bowl. Dissolve the baking soda in the water in a separate bowl, and then add to the sugar mixture.
  3. Then add peanut butter and mix completely.
  4. Sift the flour in a separate bowl and the measure 2 1/2 cups. Add flour and salt slowly to the bowl with the sugar and peanut butter and mix.
  5. Add oats and combine with a spoon.
  6. Spray cookie sheet with nonstick spray. Roll cookie dough into a small ball (about the size of a nickel) and place about an inch apart on the sheet. Remember that you will be creating a cookie sandwich so you don't want the cookie to be too big.
  7. Using a fork, gently press the cookie to flatten it slightly and then make the cross marks. Be careful not to flatten it completely.
  8. Bake in oven for 4-6 minutes. Do not over cook. You want your cookie to be a little moist and not dry and overcooked.
  9. Allow your cookies to cool completely before you add the jelly. If you add it too soon, the jelly will melt a slide out. The jelly will also allow the cookie to have a softer texture to it.

What are the benefits of using agave nectar?

Agave nectar is about 25% sweeter than your typical refined sugar. Therefore one does not need to add as much to the dish or beverage that you are preparing. There are also some health benefits associated with using agave nectar. Agave nectar has a low glycemic index which allows the sugar to process more slowly in the body. This keeps the blood sugar from raising too quickly and in return releasing insulin in the body immediately.

This is a great benefit to the general eating habits of people but especially for those who are diabetics. Having two young children and a husband who is a diabetic, we are cognizant of the amount of sugar we use. We are also always on the look out for more natural alternatives since I do not want my kids to have any of the artificial sweeteners available. This becomes a great option for our family, although with anything, should be used in moderation.

Healthy Alternatives for Our Peanut Butter Cookies

While I really am not an ogre mom, I am not a fan of filling my children with processed foods, sugars and preservatives. I like to allow my kids to have treats just like any other child, but I like to try to make them as healthy as possible. By using the agave nectar in place of the refined sugar along with the natural peanut butter and adding oatmeal, it increased the healthy choices that are found in this cookie. I also use fruit only preserves for the jelly so there is no added sugar in the jelly. It is not sugar free but it has a decreased amount of sugars that you may find in a typical peanut butter cookie. And if you give the recipe a try, you will see that it really does taste just like a peanut butter and jelly sandwich!
